Ingredients :

5 potatoes (or more depending on their size)
1 pouch of poutine sauce mix
1 bag of real Quebec cheddar cheese curds, the famous "couic-couic" poutine cheese

Fries's preparation :

Peel the potatoes and cut them into sticks
Mix the fries in the oil and place them on a baking sheet
Place in the oven for 20 minutes at 160° for cooking and then at 190° for a few more minutes for crisping

Sauce's preparation :

Pour the contents of a sauce bag into a saucepan with 600 ml of cold water
Bring to the boil, stirring with a whisk constantly
Reduce the heat and simmer for a few minutes, stirring regularly

In a soup plate, place the fries, pour the sauce over them and finally add the cheese curds.

The poutine recipe originated in rural Quebec in the 1950s and has since become popular throughout Quebec. Its exact origin is very controversial as many localities dispute its origin !

The most common story is that it originated in a restaurant formerly called "Le Lutin qui rit in Warwick", in the MRC of Arthabaska. According to the legend, in 1957, a customer named Eddy Lainesse asked the owner Fernand Lachance to put the cheese and fries in the same bag and the owner replied: "It will make a damned poutine", hence the name which means "strange mixture".
