Pets de soeur

Pets de soeur, or “nun’s farts” for english speaker, are a traditional French-Canadian dish, typical of Quebec and Acadia, often served at holiday meals. It is still a popular dessert today in some regions, such as in the French-speaking communities of Manitoba. It is a brioche-shaped pastry made of a dough covered with brown sugar and maple sirop, baked in the oven.

Description

Ingredients

80 ml (1/3 cup) maple syrup

For the dough:

  • 375 ml (1 1/2 cups) flour
  • 125 ml (1/2 cup) very cold water
  • 80 ml (1/3 cup) softened butter
  • 1.25 ml (1/4 teaspoon) salt

For the filling:

  • 180 ml (3/4 cup) brown sugar
  • 60 ml (1/4 cup) softened butter
  • 5 ml (1 tsp.) cinnamon

Preparation : 

  1. In the container of a food processor, place the ingredients for the dough. Blend until you have a ball of dough. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  2. When ready to bake, preheat oven to 180°C (350°F).
  3. In a bowl, mix the filling ingredients.
  4. On a lightly floured surface, roll out the dough into a 25-cm (10-inch) square.
  5. Spread the filling over the entire surface of the dough, then roll the dough tightly; cut the cylinder into ten rounds of the same thickness.
  6. Butter a 20 cm (8 in) square baking dish, then place the pastry rounds side by side. Pour the maple syrup over the pastry rounds. Bake for 30 to 35 minutes.
