St. Laurent Acerum is a fine spirit that reveals the delicate and refined aromas of distilled maple sap. The only ingredients used in the fermentation process are Quebec maple syrup, water, and yeast. The maple mash is then distilled twice in a Scottish-style copper still. No sweeteners or flavorings are added to the precious distillate. St. Laurent Acerum is then aged in new and used oak barrels for 3 years

It takes over 25 liters of maple sap to produce a single bottle. One of the most labor-intensive spirits to distill, Acerum is an innovation that pays homage to our ancestral sugar shack traditions.

Tasting notes:
A light, fruity profile, with aromas of apple and candied pear, notes of coconut husk, toffee, and butterscotch, a slightly spicy and tannic woody edge, and a long, creamy, velvety finish of maple butter.

Un spiritueux 100 % érable

Acerum is produced by fermenting and then distilling pure maple syrup. Unlike maple liqueurs, it contains no added sugar: the natural sugars are converted into alcohol during fermentation. The result is a structured, elegant, and dry spirit.

Vieillissement et profil aromatique

After distillation, Acerum is aged in oak barrels to develop complexity and depth. This aging process imparts woody, slightly caramelized notes, with hints of pear and a lovely roundness on the palate. Its profile will appeal to lovers of whiskey, rum, or fine spirits seeking a unique experience.
